Fresh Milled Wheat Bread

Freshly baked at Kato Crafts using wheat flour milled fresh from whole wheat berries. This hearty 2 lb loaf is made in small batches in my Zojirushi bread machine using simple ingredients: fresh ground wheat berries, water, local honey, egg, butter, yeast and pink salt.

Why Fresh Milled?

Freshly milled whole wheat flour contains the bran, germ, and endosperm of the wheat berry. Milling the whole grain shortly before baking helps preserve the natural flavor and nutrients of the grain.
